Ingredients

  • 2 lbs Quartered boneless ham (pre-sliced for easy serving)
  • 1 can Canned pineapple slices Drain well before use.
  • 1/4 cup Honey
  • 1/4 cup Brown sugar Can adjust for sweetness preference.
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Dijon mustard
Vegetables
  • 1 lb Baby potatoes, halved
  • 2 tbsp Olive oil For seasoning vegetables.
  • 3 cloves Minced garlic
  • 1 tbsp Thyme (fresh or dried)
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 lb Fresh green beans, trimmed

Method
 

Preparation
  1. Halve the baby potatoes and trim the green beans.
  2. On a large sheet pan, arrange the ham slices and layer with pineapple rings.
Season the Vegetables
  1. In a bowl, toss the potatoes and green beans with olive oil, minced garlic, thyme, onion powder, salt, and pepper.
  2. Evenly spread the seasoned vegetables around the ham on the sheet pan.
Make the Glaze
  1. In a small saucepan over medium heat, combine honey, brown sugar, apple cider vinegar, and Dijon mustard.
  2. Simmer until the mixture thickens into a glossy glaze.
  3. Brush the glaze generously over the ham and pineapple slices.
Bake to Perfection
  1. Preheat the oven to 450°F.
  2. Place the sheet pan in the oven and bake for 30 minutes, until the potatoes are tender and the ham is beautifully caramelized.
