  • 1 pound chicken breast, sliced Thinly sliced for quicker cooking
  • 2 medium zucchinis, sliced Adjust thickness according to preference
  • 2 tablespoons soy sauce Can substitute with tamari or coconut aminos
  • 2 tablespoons olive oil For cooking
  • 2 cloves garlic, minced Use fresh for best flavor
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Method
 

Preparation
  1. Heat olive oil in a large pan over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Toss in the sliced chicken breast and cook until browned and cooked through.
  4. Add sliced zucchinis and soy sauce; stir-fry until zucchinis are tender.
  5. Season with salt, pepper, and red pepper flakes if desired.
  6. Serve hot over rice or noodles.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or in the freezer for 2 months. Reheat on low heat or in the microwave.
