Method
Cooking the Chicken
- Heat olive oil in a medium skillet over medium-high heat.
- Season chicken breasts with a sprinkle of salt on both sides and place them in the pan. Cook for about 4-5 minutes on one side until a nice golden crust forms.
- Flip the chicken and cook for another 4-5 minutes until fully cooked through (cook time may vary based on thickness).
Prepare the Sauce
- While the chicken cooks, whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
- When chicken is almost done, pour the jam mixture over the top, nestling the chicken into the sauce and scraping up those delicious brown bits at the bottom of the pan.
- Reduce heat and bring the sauce to a simmer, bubbling for 2-3 minutes until it thickens a bit.
- Stir in most of the basil, and simmer for 1 more minute. (Save some for garnish!)
Serving
- Remove the chicken from the pan, pour the sauce over each piece, sprinkle with goat cheese if desired, and garnish with remaining basil and sliced strawberries.
Notes
Serve this dish on a bed of rice or alongside a fresh salad. Store in an airtight container in the fridge for up to three days. Ideal for meal prep; freeze separately and reheat before serving.
