Cooking Chicken
- Heat olive oil in a medium skillet over medium-high heat.
- Season chicken breasts with salt on both sides and place them in the pan. Cook for about 4-5 minutes until a nice golden crust forms.
- Flip the chicken and cook for another 4-5 minutes, until fully cooked through.
Preparing the Glaze
- Meanwhile, whisk together the strawberry jam, balsamic vinegar, and water in a small bowl.
- When the chicken is nearly done, pour the mixture over the chicken, nestling it into the sauce.
- Reduce heat, bring the sauce to a simmer, and let it bubble for 2-3 minutes until it thickens a bit.
- Stir in most of the basil, simmer for 1 minute (save a little for garnish).
- Remove chicken from the pan, pour sauce over the top, sprinkle with goat cheese if desired, and garnish with remaining basil and sliced strawberries.
Notes
Let the chicken rest for a few minutes after cooking for juiciness. Serve over rice or with roasted veggies. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
