  • 1 tablespoon olive oil For cooking
  • 2 pieces boneless, skinless chicken breasts Choose medium-sized
  • ½ teaspoon sea salt To season chicken
  • ¼ cup strawberry jam For the glaze
  • 1 tablespoon balsamic vinegar Enhances flavor
  • 1 tablespoon water To mix with glaze, adjust as needed
Garnish and Extras
  • ¼ cup fresh basil leaves Cut into ribbons or finely chopped
  • 2 tablespoons crumbled goat cheese Optional
  • ¼ cup fresh strawberries Sliced, optional for garnish

Method
 

Cooking Chicken
  1. Heat olive oil in a medium skillet over medium-high heat.
  2. Season chicken breasts with salt on both sides and place them in the pan. Cook for about 4-5 minutes until a nice golden crust forms.
  3. Flip the chicken and cook for another 4-5 minutes, until fully cooked through.
Preparing the Glaze
  1. Meanwhile, whisk together the strawberry jam, balsamic vinegar, and water in a small bowl.
  2. When the chicken is nearly done, pour the mixture over the chicken, nestling it into the sauce.
  3. Reduce heat, bring the sauce to a simmer, and let it bubble for 2-3 minutes until it thickens a bit.
  4. Stir in most of the basil, simmer for 1 minute (save a little for garnish).
  5. Remove chicken from the pan, pour sauce over the top, sprinkle with goat cheese if desired, and garnish with remaining basil and sliced strawberries.

Notes

Let the chicken rest for a few minutes after cooking for juiciness. Serve over rice or with roasted veggies. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
