  • 2 pounds orange-fleshed sweet potato Choose firm potatoes for best results.
  • 1 tablespoon Olive oil (or avocado oil, to coat) Use just enough to coat the slices lightly.

Method
 

Preparation
  1. If using the oven, preheat it to 425 degrees Fahrenheit.
  2. Cut off the ends of the sweet potato.
  3. Stand the sweet potato on its end and cut it in half lengthwise.
  4. Take one half and cut it into long slices, aiming for about 1/4 of an inch for even cooking.
  5. Lightly toss or brush the slices with oil on both sides.
Cooking
  1. If baking, line a baking sheet with parchment paper and lay out the potato slices in a single layer.
  2. Bake for 10 minutes at 425 degrees until tender, then broil each side for 5 minutes, flipping to cook both sides.
  3. If using an air fryer, cook at 375 degrees for 10 minutes (or at 325 degrees for air fryers that run hot), making sure the slices are in a single layer and flipping once.
Serving
  1. Top with a variety of ingredients like avocado, poached eggs, or a spread of hummus for savory options.
  2. For sweet toppings, try almond butter or cream cheese with bananas or berries.

Notes

For best results, use uniform thickness for slices and avoid overcrowding. Store leftovers in an airtight container for up to 5 days, or freeze for up to 3 months.
