Ingredients
  

Pasta and oil
  • 8 oz pasta (e.g., fettuccine or penne)
  • 2 tablespoons olive oil
Vegetables
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
Seasoning & Garnish
  • Salt and pepper to taste
  • Parmesan cheese (optional)
  • Fresh basil for garnish

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions. Drain and set aside.
Sautéing Vegetables
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the bell pepper, zucchini, and broccoli, and sauté for about 5-7 minutes until they are tender.
  3. Stir in the cherry tomatoes and garlic, cooking for an additional 2 minutes.
  4. Season with salt and pepper to taste.
Combining Ingredients
  1. Add the cooked pasta to the skillet, tossing everything together until well combined.
  2. Serve warm, garnished with Parmesan cheese and fresh basil if desired.

Notes

This dish keeps well in the fridge for up to 3 days. For longer storage, freeze for up to 2 months. Reheat on the stove over low heat, adding a splash of olive oil or water for moisture.
