  • 6 large large eggs Use room temperature for better mixing.
  • 0.5 cup full-fat Greek yogurt (unsweetened and plain) Ensure it's unsweetened for the best results.
  • 1 tablespoon baking powder
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder Use for texture.
  • 0.5 cup finely ground almond flour (optional) Make sure it's finely ground for best results.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and Greek yogurt until smooth.
  3. Add in the melted butter or coconut oil and mix well.
  4. In another bowl, combine baking powder, salt, xanthan gum (or psyllium husk), and almond flour (if using).
  5. Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
  6. Pour the batter into a greased loaf pan and smooth the top.
Baking
  1. Bake for 30-35 minutes or until a toothpick comes out clean.
  2. Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to three days or refrigerate for about a week. Freeze slices for up to three months.
