Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs and Greek yogurt until smooth.
- Add in the melted butter or coconut oil and mix well.
- In another bowl, combine baking powder, salt, xanthan gum (or psyllium husk), and almond flour (if using).
- Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
- Pour the batter into a greased loaf pan and smooth the top.
Baking
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to three days or refrigerate for about a week. Freeze slices for up to three months.
